MUMBAI, India, May 1 -- Intellectual Property India has published a patent application (202641048099 A) filed by National Institute Of Food Technology, Entrepreneurship And Management, Thanjavur, Tamil Nadu, on April 15, for 'a method for preparing a functional tea beverage from broccoli leaves.'

According to the abstract released by the Intellectual Property India: "The present disclosure proposes a method for preparation of a functional tea beverage from broccoli leaves. The method comprises receiving, sorting, and washing broccoli leaves followed by withering under controlled conditions. The withered leaves are selectively processed through either a blanching pathway or a fermentation pathway. The blanching pathway includes steam blanching to preserve color and bioactive compounds, while the fermentation pathway includes rolling, fermentation, and pan-firing to develop flavor and aroma. The processed leaves are dried using a fluidized bed dryer to achieve a moisture content of about 3-5% and cooled to obtain dried broccoli leaf tea material. The material is infused in hot water to obtain a beverage. The beverage is substantially free of caffeine and comprises bioactive compounds including polyphenols, flavonoids, glucosinolates, and vitamins. The method enables valorization of broccoli leaf waste into nutritionally enriched tea alternatives with improved sensory characteristics and reduced agricultural waste."
