MUMBAI, India, July 5 -- Intellectual Property India has published a patent application (202111027803 A) filed by Amity University, Noida, Uttar Pradesh, on June 21, 2021, for 'a method for preparing cheese analogue and its compositions.'
Inventor(s) include Dr. Soumya Ranjan Purohit.
The application for the patent was published on July 4, under issue no. 27/2025.
According to the abstract released by the Intellectual Property India: "The present invention generally describes a method and process technology for cheese analogue. The present invention reports a process for preparing convenient, ready-to-eat imitation cheese from sorghum milk and soya milk blend. More particularly, the present invention relates to a process for preparing cheese from plant -based protein sources rather than using conventional animal-based protein sources. Further, the present invention relates to a process that provides imitation cheese which is vegan and lactose free. Moreover, the process eliminates use of rennet for development of cheese. Also, the present invention relates to development of imitation cheese from imitation milk prepared with dehulled sorghum grains."
