According to the abstract released by the Intellectual Property India: "The present invention discloses a dehydrated high-protein sauce composition comprising resistant dextrin and emulsifiers and a method for preparation thereof. The composition comprises 20-55% by weight of one or more protein components, 5-30% by weight of resistant dextrin, and 0.2-5% by weight of one or more food-grade emulsifiers, along with optional ingredients selected from flavoring agents, fats, vegetable powders, hydrocolloids, stabilizers, acidity regulators, and seasoning agents. Upon hydration with an aqueous medium, the composition forms a stable sauce due to the interaction between protein and resistant dextrin forming a protein-fiber matrix that enhances viscosity and stabilizes lipid dispersion. The method comprises dry blending the components, incorporating emulsifiers and functional ingredients, followed by dehydration through spray drying or drum drying to obtain a storage-stable powder. The invention provides improved nutritional value, enhanced protein and dietary fiber content, and superior emulsion stability compared to conventional starch-based sauce formulations."
