Abstract: The present invention relates to a novel dual-component probiotic beverage system designed to enhance nutritional value, storage stability, and consumer acceptability through the separate incorporation of spirulina-loaded edible spherified beads into a pineapple-based probiotic beverage at the time of consumption. The system comprises a fermented pineapple beverage containing viable probiotic microorganisms and one or more spirulina-loaded edible beads prepared using a food-grade spherification process. The spirulina component is encapsulated within a hydrocolloid matrix to preserve its bioactive compounds, prevent undesirable flavour and colour changes during storage, and improve overall product stability. The probiotic beverage and spirulina beads are packaged separately and combined immediately before consumption, thereby enabling controlled nutrient release and maintaining the functional properties of both components. The spherified beads may be formulated using food-grade encapsulating materials including alginate, pectin, carrageenan, gelatin, gellan gum, or combinations thereof. Upon mixing, the beads release spirulina and associated nutrients into the beverage, providing enhanced antioxidant activity, protein content, micronutrient availability, and probiotic benefits. The invention minimizes degradation of sensitive bioactive compounds during storage, improves sensory characteristics, reduces sedimentation, and offers an innovative consumer experience through on-demand nutrient incorporation. The beverage system may be utilized as a functional food, nutraceutical product, health drink, or dietary supplement suitable for various consumer populations. The invention provides a practical, safe, consumer-friendly, and commercially scalable approach for delivering probiotics and spirulina in a stable and nutritionally enhanced beverage formulation.
