MUMBAI, India, March 13 -- Intellectual Property India has published a patent application (202541134700 A) filed by Evangelien Priyadharshini S, Chengalpattu, Tamil Nadu, on Dec. 31, 2025, for 'nutritionally fortified spirulina-infused one bite cakes with enhanced protein and antioxidant content.'

According to the abstract released by the Intellectual Property India: "The present invention discloses a method for preparing portion-controlled, spirulina-fortified, millet-based bite-sized cakes and products thereof. The method comprises: preparing a Ragi flour-based batter (11.63% Ragi flour, 18.60% palm jaggery, 0.19% baking soda, 0.16% citric acid, 3.1% cocoa powder, 6.2% milk, 3.1% alkaline water, 9.3% probiotic curd, 3.8% butter); baking at 178-182 C for 35-50 minutes; preparing a ganache by melting dark chocolate (7.75%), milk (3.87%), flavoring (0.4%), and stevia (0.18%); critically cooling the ganache to 40-45 C before adding spirulina powder (1.65%) to preserve at least 90% of its nutritional properties; mixing cooled cake with fortified ganache for 15-20 minutes; coating silicone molds (3 cm diameter, 1.5 cm height) with melted chocolate (29.9% dark chocolate, 0.06% stevia); filling with cake-ganache mixture; and refrigerating at 4-6 C for 10-15 minutes. The resulting product exhibits: protein 24.97 g/100g; antioxidant 820.303 mg/kg (gallic acid equivalent); potassium 701.96 mg/100g; calcium 179.51 mg/100g; iron 10.68 mg/100g; gluten 1.0 g/100g; trans fat 0.10 g/100g. Each piece weighs 10-11 grams. Shelf life: 15 days at 4-8 C."
