Abstract: Antimicrobial resistance is rising globally due to the overuse and improper use of antibiotics. Therefore, there is a growing need for natural and preventive solutions that can support health while reducing the dependency on antimicrobial drugs. The present invention relates to a probiotic-enriched nutritional bar and a method of preparation thereof. The prepared probiotic enriched nutritional bar is composed of roasted ragi flour, chopped dry fruits including cashews and almonds, a natural binding component derived from date paste, and probiotic bacteria a primary ingredient, preferably Enterococcus durans RSMD YP. The probiotic is incorporated during the final stage of preparation under controlled temperature to achieve a viable cell count of 106-108 CFU per serving, followed by shaping into bar form. The prepared nutritional bar exhibits antibacterial activity against Escherichia coli and Staphylococcus aureus, thereby confirming the probiotic functional property. The composition provides a nutritionally balanced, ready-to-consume product with enhanced functional properties through the addition of probiotic strain. The invention thus offers a functional food product with combined nutritional and antibacterial benefits.
