Abstract: ABSTRACT A CLEAN-LABEL, PLANT-PROTEIN AND NATURALLY-ISOTONIC ELECTROLYTE NUTRITIONAL BAR AND A PROCESS FOR PREPARATION THEREOF Disclosed is a clean-label nutritional bar which combines, in a single solid food matrix, a plant-derived protein source and a naturally- isotonic electrolyte profile, formulated substantially without synthetic mineral salts, artificial sweeteners, artificial colours, artificial flavours, synthetic emulsifiers or chemical preservatives. The bar comprises extruded puffs of indigenous nutri-cereals (jowar and ragi), peanut protein isolate and mixed seeds as protein sources, a jaggery/hi-maltose-tapioca-syrup binder system in a ratio of about 1:2, coconut water powder and Himalayan pink salt as a naturally-isotonic electrolyte carrier system (potassium: sodium ratio of about 9:1), and a rosemary-extract-based natural antioxidant system. A representative 50 g unit portion provides about 16.2 g protein, about 487 mg potassium, about 85 mg magnesium and about 52 mg sodium, at a water activity of about 0.58, rendering the product microbiologically shelf-stable at ambient temperature without chemical preservatives. Also disclosed is a process for preparing the bar, comprising dry-mixing the cereal, protein and electrolyte components; cooking and combining the binder syrup therewith; incorporating the antioxidant system; moulding, cooling and cutting into unit portions; and packaging in a multi- layer barrier laminate. The bar exhibits statistically significant sensory and purchase-intent advantages over a representative commercial control product. [
