Abstract: ABSTRACT TITLE: A COMPACTION-ASSISTED DIFFUSION PROCESS FOR EXTRACTING JUICE CONTAINING SUCROSE FROM A SUGAR BEET ROOT The present invention provides a compaction-assisted diffusion process for extracting sucrose-rich juice from sugar beet roots. The process includes cutting the roots into flakes of defined dimensions, subjecting the flakes to mechanical compaction at a pressure of 3 to 25 MPa to rupture cell walls and release a first juice fraction, and subsequently adding preheated water (70°C to 75°C) to the compacted residue followed by simultaneous compaction to diffuse residual sucrose into water, thereby yielding additional juice fractions. The compaction-assisted diffusion step may be repeated one or more times to maximize recovery. The process enables high sugar extraction efficiency, achieving 94% to 98% sucrose recovery with a final solid residue having moisture content below 5%.
