Abstract: The present invention relates to a cashew apple pomace-based rusk and a process for preparation thereof. The composition comprises wheat flour, cashew apple pomace powder, semolina, sugar, milk powder, butter, yeast, baking powder, baking soda, salt, and cardamom powder. The process comprises collection of pomace, washing, optional steam blanching, drying, grinding, sieving, dough preparation, proofing, baking, slicing, and roasting. The invention provides enhanced protein content, increased dietary fibre, improved antioxidant activity, and enhanced mineral content. The invention provides a sustainable and economically valuable approach for utilization of cashew apple processing waste while producing a consumer-acceptable functional bakery product.
