Abstract: The present invention relates to a method of producing a preserved food product using a naturally derived curing composition. The method comprises extracting mineral salts from a marine-derived material to obtain a functional curing agent, and applying the curing agent to a food substrate prior to a preservation process. The curing composition is configured to reduce sodium content in the preserved food product while maintaining preservation efficiency, product stability, and sensory acceptability. The resulting preserved food product exhibits an improved mineral profile and enhanced functional properties as compared to conventionally preserved products. The invention further relates to a low-sodium preserved food product produced using the aforesaid method and curing composition. Figure 2 is the representative figure.
