The application for the patent was published on August 07, 2026, under issue no. 32/2026.
Abstract: The present invention relates to a nutrient-fortified traditional Indian sweet (laddu) and a process for its preparation. The composition comprises finger millet (Eleusine coracana) flour, roasted chickpea (Cicer arietinum) flour (sattu), Moringa oleifera leaf powder (MOLP), jaggery and ghee, with MOLP incorporated at about 5% by weight of the combined dry base, this concentration having been identified through comparative sensory evaluation (against 10% and 15% MOLP formulations) as optimum for appearance, colour, flavour, texture, taste and overall acceptability. The process comprises roasting the dry ingredients, preparing a jaggery syrup of soft- ball consistency, combining the same with warm ghee to form a dough, and hand-shaping the dough into laddus. The accepted formulation exhibits a nutrient profile, per 100 g, of about 6.41 g% protein, 10.88 mg% iron, 18.00 15 mg% calcium, 110.00 mg% phosphorus and 3.44 mg% vitamin C, and retains acceptable sensory quality for up to five days of ambient storage in a food-grade air-tight container. The invention provides a low-cost, culturally acceptable, ready-to-eat functional food suited to addressing micronutrient deficiencies, particularly among adolescent girls, women and children.
