Abstract: TITLE: A PROCESS OF EXTENDING THE SHELF LIFE OF A CUT MORINGA STICKS APPLICANT: JOHN SARGENT RAJ J APPLICATION NUMBER: 202541006242 DATED: 25/01/2025 ABSTRACT The present invention discloses a process for extending the shelf life of cut moringa (drumstick) sticks while retaining nutritional quality, chlorophyll content, texture, and taste. The process comprises washing fresh moringa sticks with aqueous ozone solution (2–3 ppm for 5– 10 minutes) to reduce microbial load, followed by air drying and cutting into pieces of 5–10 cm length. The cut sticks are blanched in hot water at 90–95 °C for 3–5 minutes using specific reagents, namely sodium carbonate or sodium bicarbonate (0.5–1.0%), turmeric powder (0.2–0.5%), or food grade bactericides such as sodium hypochlorite, hydrogen peroxide, peracetic acid, or chlorine dioxide at defined concentrations. The blanched sticks are immediately cooled in an ice bath (0–4 °C for 2– 3 minutes), air dried, and packed in a nitrogen atmosphere using HDPE, PP, or multilayer laminates with oxygen transmission rate below 10 cc/m²/day and stored at 4oC. The packaged product demonstrates extended shelf life under varied storage conditions without compromising sensory attributes.
