Abstract: The present invention relates to a system and method for predicting postprandial glucose spikes in humans through an integrated computational model that combines starch digestion kinetics and polyphenol-mediated enzyme inhibition, linked to a continuous glucose monitoring (CGM) device. The system comprises a processing unit configured to simulate starch hydrolysis using enzyme– substrate reaction models and apply polyphenol inhibition constants to modulate digestion rates. Real-time glucose data from the CGM are used to dynamically calibrate the model, enabling accurate prediction of postprandial glucose responses. The invention further provides a user interface for displaying predicted glucose curves and dietary recommendations based on the inhibitory effects of polyphenols. This integration provides a novel approach to personalized diabetes management, dietary planning, and glucose control by combining in silico digestion modeling with real-time physiological feedback.
