The alginate matrix serves as a carrier for trans-cinnamaldehyde, providing a protective barrier against fungal pathogens during the postharvest storage of apples. The antimicrobial efficacy of the coating was evaluated over an extended period, demonstrating a significant reduction in postharvest rot compared to untreated controls. The invention is a sustainable and effective solution for enhancing the shelf life of apples while minimizing the reliance on synthetic fungicides.
