Abstract: ABSTRACT “AN AMLA POMACE BASED FUNCTIONAL SYNBIOTIC YOGHURT FORMULATION AND A PROCESS FOR PREPARATION THEREOF” The present invention relates to an amla pomace based functional synbiotic yoghurt formulation and a process for preparation thereof. The formulation comprises milk as a base medium, probiotic yoghurt cultures comprising Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus, and amla (Emblica officinalis) pomace powder as a prebiotic component. The pomace powder is incorporated in a concentration ranging from 1% to 3% and in defined particle sizes to enhance functional properties. The process includes extraction of amla juice, drying and processing of pomace, incorporation into milk with skimmed milk powder, inoculation with starter culture, and controlled fermentation at about 42°C for 5–7 hours. The formulation exhibits improved nutritional value, antioxidant activity, physicochemical stability, and probiotic viability, thereby providing a sustainable synbiotic food product utilizing fruit processing by-products.
