Abstract: ABSTRACT APPARATUS AND METHOD FOR STEAMING TEA LEAVES An apparatus for steaming tea leaves comprises a steam cabinet (100) having a loading chamber (102) configured to receive perforated trays of tea leaves, a steam inlet port (200) and diffuser (202) arranged to introduce and distribute super-heated steam within the loading chamber (102), and a plenum chamber (300) separated from the loading chamber (102) by perforated walls (302). An induced draft blower (400) is configured to circulate a mixture of steam and air from the loading chamber (102) into the plenum chamber (300) and back into the loading chamber (102) to achieve uniform heat distribution. The apparatus enables controlled steaming of tea leaves with reduced surface condensation and improved uniformity of enzyme deactivation. Fig. 1
