The application for the patent was published on August 07, 2026, under issue no. 32/2026.

Abstract: The present invention relates to an improved soaking process for the production of matta brown rice flakes with enhanced colour stability, nutrient retention, and overall product quality. The method employs a buffered mineral–acid system prepared by incorporating controlled concentrations of citric acid and a filtered hydrated lime solution into soft water to achieve a stable pH range of 5.5 to 6.5. Cleaned matta paddy is soaked in this solution for a duration dependent on grain maturity, wherein freshly harvested paddy is treated for shorter periods and aged paddy for longer durations. The combined action of mild acidification and calcium ion enrichment stabilizes the bran layer, minimizes enzymatic browning, and reduces the loss of essential minerals and bioactive compounds during processing. The treatment also improves the textural characteristics of the flakes by promoting uniform softening without structural damage. Additionally, the controlled pH environment contributes to reduced microbial activity, thereby extending shelf life. The process is simple, cost-effective, and compatible with existing industrial rice flake manufacturing systems, providing a practical solution for producing high-quality, nutritionally preserved matta rice flakes with improved sensory and storage properties.
