Abstract: The present disclosure proposes a caffeine-free aerated drink powder composition (100) derived from Basket Fern (Drynaria quercifolia) rhizome. The composition (100) comprises 45–50 weight percentage of concentrated aqueous Basket Fern rhizome extract (102), 6–10 weight percentage of citric acid (104), 6–9.5 weight percentage of tartaric acid (106), 6–9.5 weight percentage of sodium bicarbonate (108), 15–20 weight percentage of sucrose (110), and 0.5–1 weight percentage of polyethylene glycol 6000 (112). The concentrated aqueous Basket Fern rhizome extract (102) is obtained from Basket Fern rhizome powder by ultrasound-assisted enzymatic maceration (UAEM-I), comprising enzymatic maceration using cellulase and pectinase followed by ultrasound treatment. The extract (102) comprises phenolic compounds, flavonoids, tannins, saponins, and catechins. The composition (100) forms a particulate beverage matrix exhibiting suitable flowability, dispersibility, rapid reconstitution with water, and effervescence while retaining phytochemical constituents.
