Abstract: The present invention discloses an integrated composition and method for extending shelf life and preserving flavor quality in ready-to-drink green tea beverages using Clitoria ternatea flower extract as a triple-function additive. Polyacylated ternatin anthocyanins form copigmentation complexes with green tea catechins, reducing oxidative degradation and retaining more than 78% total polyphenols after 56 days at 37°C, compared with less than 49% in untreated controls. The pH-sensitive ternatins simultaneously function as intrinsic visual quality indicators, changing from blue-green to violet-purple in response to storage-induced acidification associated with polyphenol degradation. The system further incorporates L-cysteine-mediated scavenging of Strecker aldehydes, reducing 3-methylbutanal formation by up to 78% and suppressing cooked-off flavor development. Combined with a synergistic stabilizer matrix, oxygen-scavenging UV-protective packaging, and an Arrhenius-based composite quality prediction algorithm, the invention extends beverage shelf life to 12–18 months while enabling real-time visual quality assessment.
