Abstract: The present invention relates to a Fat-based confection composition for coating a frozen confection comprising: fat in an amount of 35 to 65 wt%; sugars in an amount of 20 to 50 wt%; seed kernel paste in an amount of 5 to 30 wt%; cocoa solids in an amount of 5 to 20 wt%; wherein the seed kernel paste provides a portion of the fat, and the fat provided by the seed kernel paste comprises at least 30 wt% MUFA, no more than 20 wt% SAFA, and no more than 50 wt% PUFA; and wherein the seed kernel paste comprises high oleic sunflower seed kernel paste.
