Abstract: The present invention relates to a community-level mango processing system comprising a semi-automatic mango pulp extractor and an infrared-assisted solar drying unit for converting ripe mangoes into value-added and shelf-stable products. The mango pulp extractor comprises a food-grade processing chamber, rotating shaft, scraper or blade assembly, adjustable knife-edge arrangement, seed separation mechanism and motor-driven transmission arrangement for efficient mechanical extraction of mango pulp with reduced manual intervention. The extracted pulp may be subjected to controlled heating or ohmic sterilization and subsequently transferred to a mechanical spreading arrangement for substantially uniform distribution over food-grade drying trays. The drying unit comprises an enclosed solar drying chamber having a solar radiation receiving cover, heat-absorbing surface, infrared heating elements, air circulation fan, dust filtration arrangement and exhaust chimney for controlled removal of moisture. Solar energy is supplemented by infrared heating to maintain suitable drying conditions and reduce excessive heating and product deterioration. Mango kernels and peels generated during processing may additionally be utilized as biomass fuel for hot-water generation. The system provides an economical, hygienic and energy-efficient solution for community-level mango processing and value addition.
