The application for the patent was published on October 30, 2026, under issue no. 44/2026.

Abstract: The present invention relates to anon-fermented, nutrient-fortified dairy-based rice analogue developed for the safe management of pregnancy-related cravings for raw rice (Ryzophagia). The rice analogue comprises a milk protein-based structural matrix, a carbohydrate binder capable of forming an amorphous glassy phase, microparticulate mineral components, bioavailable micronutrients, texture-modifying agents and leavening components. The composition is engineered to provide high initial bite resistance followed by controlled brittle fracture and shattering, thereby reproducing selected tactile and acoustic sensory characteristics associated with raw rice consumption. The invention further provides a method for preparing the rice analogue involving homogenization of the dairy and carbohydrate components, partial thermal treatment, incorporation of functional ingredients, shaping into grain-like forms, controlled thermal dehydration and vitrification to obtain a low-moisture porous matrix, followed by cooling and packaging under moisture-barrier conditions. The resulting product combines sensory functionality with nutritional enrichment and is intended to provide a processed food-based alternative to direct consumption of raw rice during pregnancy. The invention thereby addresses the identified gap between nutritional supplementation and the sensory requirements associated with pregnancy-related raw rice cravings.
