Abstract: The present invention discloses a novel dual-component functional food system comprising; (A) a Sprouted Microgreens Bread prepared from whole wheat flour blended with sprouted mixed grain microgreens flour (wheat, ragi, jowar, barley, millet), sprouted green gram or chickpea, and Indian borage (Plectranthus amboinicus) leaf paste; and (B) an Orange Zest Chocolate Sesame Spread formulated from roasted sesame seeds, dark cocoa powder, fresh orange zest, roasted almond powder, butter, and jaggery powder. The sprouting process reduces anti-nutritional factors and enhances the bioavailability of protein, iron, calcium, and B-vitamins. Indian borage contributes anti-inflammatory, antimicrobial, and digestive health benefits. The spread provides antioxidants (flavonoids, vitamin C), healthy fats, and natural sweetness without refined sugar. Together, this food system constitutes a nutritionally superior, low-GI, high-fiber, antioxidant-rich meal component. The invention is free from artificial additives and refined sugars, aligning with contemporary consumer demand for clean-label functional foods.
