MUMBAI, India, June 26 -- Intellectual Property India has published a patent application (202431100545 A) filed by Indian Institute Of Technology Guwahati on December 18, 2024, for Energy-Efficient Nutritious Bioactive Unripe Papaya Powder Compatible To Gluten-Reduced And Gluten-Free Functional Baked Food Formulation.

Abstract: ABSTRACT Title: Energy-efficient Nutritious Bioactive Unripe Papaya Powder Compatible To Gluten-reduced and Gluten-free Functional Baked Food Formulation The present invention provides a bioactive unripe papaya powder based formulation comprising: powdered unripe papaya pulp (PPU) and peel (PPE) which is fibre and mineral enriched as functional baked food product active comprising: total phenol content (mg GAE/100g) 91 to 71, total flavonoid content (mg Quercetin/100g) 95 to 56, antioxidant activity 96.12 to 82.06, potassium (ppm) 123.67 to 1456.19, crude fiber content (g/100g) 9.05 to 11.95, total carbohydrate content (g/100g) 59.01 to 62.77 and can be formulated in an energy-efficient process as a useful resource in the functional baked food products. The invention further provides a baked food product having fiber and mineral enrichment along with co-acting sensory attributes comprising: from 1.5 to 12.5 wt%, preferably 12.5 wt% and 0.5 to 2.5 wt%, preferably 2.5. wt% of unripe papaya pulp and peel dried powder respectively in a mixture of Bioactive papaya extract; from 30 to 60 wt% of grain-based flour, wherein said grain-based flours includes powdered wheat, rice, green gram, oats and finger millet as variable flours and Bengal gram, roasted chickpea for 15 wt%.
