Abstract: ABSTRACT The present invention relates to a biodegradable and edible chitosan-based dip coating functionalized with a clove oil-soy lecithin nanoemulsion for enhancing the post-harvest shelf life of mangoes and controlling anthracnose disease. The nanoemulsion consists of clove essential oil as a natural antifungal agent and soy lecithin as a biocompatible emulsifier, producing a stable formulation with improved dispersion and coating efficiency. The chitosan matrix forms a thin, uniform, semi-permeable film over the fruit surface, reducing moisture loss, regulating gas exchange, and serving as a carrier for the sustained release of clove oil. The coating is applied by a simple dip-coating process and is intended to inhibit the growth of Colletotrichum species, the primary causative agents of anthracnose, while preserving the physicochemical and sensory quality of mangoes during storage. The invention further aims to maintain fruit firmness, minimize weight loss, delay ripening, and extend the marketable shelf life without the use of synthetic fungicides. This eco-friendly, biodegradable, and non-toxic coating system provides a sustainable and cost- effective post-harvest preservation strategy for mangoes and has potential applications for other climacteric fruits susceptible to fungal spoilage.
