Abstract: The study explores the potential of utilizing banana pseudo stem and jaekfruit seed as: sustainable, nutrient rich ingredients in the formulation of instant soup powder. Both banana pseudo stein and jackfruit seed are commonly discarded agricultural byproducts, yet they possess significant mitritional and functional properties that can be harnessed for value-added food products. The banana pseudo stem, dell in dietary fiber; potassium, and antioxidants, offers digestive health benefits and natural thickening properties suitable for soup formulations. Jackfruit seeds, on the other hand, are abundant in protein, complex carbohydrates, and essential minerals, contributing to the nutritional quality and texture of the soup in this research, both ingredients were proc€ssed, dried, and blended with other conventional soup components to develop a functional instant soup powder. The formulated sups were evaluated for their physicochemical proPerties; senSery acceptability, and nutritional content Results indicated that the incorporation of banana- pseudo stern and jackfruit seed powder not only enhanced the fiber and protein cement bitt also contributed to a desirable mouthfeel and flavor profile: This study highlights the potential of Underutilized plant-based resources in developing healthy, functional convenience foods, aligning with current trends in sustainable and waste reducing food innovation.
