Abstract: ] The present invention relates to a green process for synthesis and production of single cell protein from fruit peel extract using Saccharomyces cerevisiae. Fruit peels obtained from one or more edible fruits are cleaned, size reduced, and subjected to environmentally friendly extraction for obtaining a nutrient-rich fermentation medium containing naturally occurring sugars and micronutrients. The prepared extract is inoculated with Saccharomyces cerevisiae and fermented under optimized aerobic conditions to generate protein-rich microbial biomass. The biomass is subsequently recovered, washed, dried, and processed into stable single cell protein powder suitable for nutritional applications. The process minimizes dependence on refined carbon sources and harsh chemical treatments while simultaneously converting fruit processing waste into value-added protein. The invention offers an economically viable, environmentally sustainable, and industrially scalable technology for waste valorization and production of alternative protein for applications including animal feed, aquaculture, poultry nutrition, biofertilizers, and related industrial sectors.
