Abstract: The present invention relates to a herbal instant premix masala tea composition formulated using standardized herbal extracts, tea solids, and functional excipients for rapid preparation of a flavored and health-promoting beverage. More particularly, the invention provides a free-flowing, stable, and instantly dispersible premix powder comprising spray-dried tea extract, herbal extracts selected from ginger (Zingiber officinale), tulsi (Ocimum sanctum), cinnamon (Cinnamomum zeylanicum), cardamom (Elettaria cardamomum), clove (Syzygium aromaticum), and black pepper (Piper nigrum), optionally combined with milk solids, plant-based creamers, natural sweeteners, maltodextrin, and anti-caking agents. The formulation is designed to dissolve rapidly in hot water without sedimentation and provides improved organoleptic properties including aroma, taste, mouthfeel, and color consistency. Standardized herbal extracts containing active phytoconstituents such as gingerols, eugenol, and cinnamaldehyde contribute antioxidant, digestive, soothing, and immunomodulatory benefits. The invention further discloses a controlled manufacturing process involving extraction, concentration, spray-drying, dry blending, sieving, and packaging under low-humidity conditions to obtain a uniform and shelf-stable product. Physicochemical evaluation demonstrated excellent flow properties, moisture content below 4%, and complete dissolution within 30 seconds. Accelerated stability studies conducted at 40°C and 75% relative humidity for three months showed no significant changes in appearance, solubility, or active constituent content, confirming product stability. Functional evaluation using DPPH assay demonstrated significant antioxidant activity, while sensory evaluation indicated high consumer acceptability. The invention overcomes limitations associated with traditional masala tea preparation and conventional instant tea products by providing a standardized, convenient, travel-friendly, and functionally enhanced herbal beverage composition with improved stability and rapid preparation characteristics.
