Inventors include Shivani Kohli; and Dr. Sujata Pandit Sharma.

The application for the patent was published on July 17, 2026, under issue no. 29/2026.

Abstract: Abstract Disclosed is an integrated jackfruit waste vinegar processing system for producing functional vinegar from non-edible jackfruit residues. The system comprises a processing platform supporting conversion of jackfruit peel, core, and fibrous rags into a fermented vinegar product. A substrate preparation unit receives the jackfruit residues and produces prepared biomass. A hydrolysis unit converts the prepared biomass into a sugar-containing hydrolysate. An alcoholic fermentation unit converts the sugar-containing hydrolysate into an ethanol-containing broth. An acetous fermentation unit directly receives the ethanol-containing broth and converts ethanol therein into acetic acid. A recovery unit separates a functional vinegar product from fermented broth. The system provides a coordinated waste-to-vinegar pathway in which non-edible jackfruit residues are converted through hydrolysis, alcoholic fermentation, acetous fermentation, and product recovery.
