Abstract: The present invention discloses a method for enhancing oxidative stability and extending the shelf life of crude jackfruit (Artocarpus heterophyllus Lam.) seed oil. The method comprises minimal-refining cold-press extraction to preserve endogenous tocopherols and natural antioxidants, synergistic stabilization using a ternary blend of rosemary extract, ascorbyl palmitate, and lecithin, nitrogen-flushed modified atmosphere packaging in opaque containers with one-way valve closures, and non-invasive oxidation monitoring through ATR-FTIR and UV-Vis spectroscopic parameters. The crude oil retains approximately 1000 mg/kg total tocopherols, substantially higher than refined oil, providing effective chain-breaking antioxidant protection. Under accelerated oxidation conditions at 60°C for 45 days, the stabilized oil exhibits significantly reduced deterioration, reflected by lower acid value, peroxide value, p-anisidine value, and TOTOX indices. The integrated preservation system achieves a projected shelf life of 18–24 months at 25°C and 30–36 months at 4°C, enabling valorization of jackfruit seeds into a commercially viable antioxidant-rich edible oil.
