Abstract: The present invention relates to a method for producing a natural, caffeine-free coffee substitute from date seeds (Phoenix dactylifera L.). The method comprises cleaning, drying (to 6-10% moisture), roasting (at 180-200°C for 30-45 minutes), cooling, and grinding date seeds into fine powder. The controlled roasting process develops coffee-like aroma, colour, and flavor through Maillard reactions and caramelization without the use of any chemical additives. The resulting product is naturally caffeine-free ( 0.1% caffeine), rich in antioxidants and minerals, and can be brewed similar to conventional coffee. The invention provides a sustainable, cost- effective, and health-friendly beverage alternative while valorising agricultural waste from date processing industries. The product has demonstrated commercial viability with strong market potential in the functional food and wellness beverage sectors.
