Abstract: Abstract Disclosed is a method of preparing a sugar-free Chyawanprash formulation. Fresh amla fruits are steam-cooked until softened, deseeded, and homogenized to form an amla pulp. The amla pulp is heated at 70°C to 80°C for 10 to 20 minutes while being continuously mixed to reduce moisture and form a concentrated amla matrix. Heating is thereafter terminated and the concentrated amla matrix is cooled below approximately 65°C. A monk fruit extract comprising mogrosides is subsequently incorporated into the concentrated amla matrix. The formulation is prepared without added sucrose or jaggery, and a semi-solid consistency is established through concentration of the amla pulp and controlled moisture reduction rather than through a sucrose-derived bulk phase.
