Abstract: ABSTRACT MILLET-BASED PREMIX FOR STEAMED-FERMENTED PRODUCTS AND A PROCESS FOR ITS PREPARATION The present disclosure relates to a millet-based premix for steamed-fermented products. The millet-based premix of the present disclosure reduces the reliance on refined ingredients and has nutritional benefits in the form of relative proportions of macronutrients. The present disclosure also provides a process for the preparation of a steamed-fermented product. The process is simple, easy, and scalable. The steamed-fermented food product prepared by using the millet-based premix of the present disclosure has superior sensory appeal as compared to the currently available marketed millet-based premixes.
