Abstract: The invention discloses a process for preparing multi-millet tortilla chips. Curry leaves are hybrid-dried at about 60°C and pulverized to obtain powder. Jowar, amaranth, and ragi flours are roasted at about 115°C for 10 minutes. The roasted flours, all-purpose wheat flour, chickpea flour, quinoa flour, curry leaf powder, salt, ajwain, and guar gum are ground and sieved through 250 µm aperture. The sieved ingredients are mixed, blended with sunflower oil heated to 60°C–70°C, combined gradually with water, and kneaded for about 3 minutes to obtain dough. Dough is rested for about 15 minutes, divided, dusted with wheat flour, and rolled to thickness of about 1.2 mm. Dough sheets are cut into triangular pieces having three 5 cm sides and 4 perforations each. The pieces are transferred to dusted tray, deep-fried at 170°C–190°C for 50–80 seconds, drained on absorbent paper, coated with seasoning, and air-cooled for 5–10 minutes to 25°C–27°C.
