MUMBAI, India, July 24 -- Intellectual Property India has published a patent application (202611066976 A) filed by Noida Institute Of Engineering And Technology Niet on May 28, 2026, for Mycoprotein Production From Food Waste Hydrolysates Using Rhizopus Oligosporus For Plant-Based Food Applications.

Abstract: The present invention provides a synergistic bioprocess for producing nutritionally complete mycoprotein from food industry waste streams using Rhizopus oligosporus (MTCC 556A) through optimized submerged fermentation. A rationally designed triple- hydrolysate substrate platform comprising enzymatic rice bran hydrolysate, stale bread hydrolysate, and chickpea protein hydrolysate provides complementary carbon, nitrogen, and essential amino acid inputs at an optimized C/N ratio of approximately 27:1. The process exploits a dual enzymatic cascade wherein exogenous enzymes pre-hydrolyze substrates and endogenous R. oligosporus enzymes, including phytases, perform in situ secondary hydrolysis with simultaneous mineral liberation. Under optimized dynamic cultivation, biomass yield of 22.85 g/L with 70.25 g/100 g protein and 368.45 mg/g essential amino acid content is achieved within 5 days, scalable to 38.50 g/L in fed-batch bioreactor operation. The mycoprotein meets FAO/WHO amino acid requirements without synthetic supplementation. Integrated RNA reduction, thermomechanical texturization, and food product formulations are disclosed.
