Abstract: Non-aspartame sweetener compositions, systems and methods for predicting the sweetness intensity of confectionery products, and coating compositions comprising rebaudioside M are disclosed herein. A non-aspartame sweetener composition may include one or more of an unencapsulated high intensity sweetener other than a steviol glycoside, an agglomerated rebaudioside, an agglomerated high intensity sweetener other than a steviol glycoside, and a mixture of steviol glycosides. The composition may also include at least one of a first encapsulated high intensity sweetener and a second encapsulated high intensity sweetener different from the first encapsulated high intensity sweetener, wherein each of the first encapsulated high intensity sweetener and the second encapsulated high intensity sweetener is one of saccharin and its salts, acesulfame and its salts, or another high intensity sweetener other than a steviol glycoside.
