Abstract: Present invention discloses nutrient-rich millet cookies enriched with Mucuna pruriens seed powder. The cookies consists 334g finger millet flour, 100g of wheat flour, 263g of butter, 263g jaggery powder, 40-42g Mucuna pruriens seed powder, Cinnamomum tamala and desiccated coconut as per taste. The preparation method involves mixing butter and jaggery powder until light and fluffy, mixing finger millet flour, wheat flour and Mucuna pruriens seeds powder with jaggery and butter mixture to form dough, adding Cinnamomum tamala and desiccated coconut based on taste, scooping tablespoon of dough, shaping it to cookies, placing it on lined baking tray with spacing of 2 inches between each cookie, baking the cookies for 12-15 minutes at 175oC until the edges turn golden, removing cookies from oven and cooling them for 5 minutes. The invention provides nutritious and flavorful cookies with additional health benefits due to inclusion of Mucuna pruriens and Cinnamomum tamala.
