Abstract: ABSTRACT “PLANT-BASED HIGH-PROTEIN SNACK BAR COMPRISING PUFFED QUINOA AND PISTACHIOS” The present invention relates to a nutritionally enriched snack bar comprising puffed quinoa and pistachios combined with natural binding agents selected from date paste, jaggery syrup, or honey. The formulation provides a clean-label, plant-based, and gluten-free snack product rich in protein, dietary fiber, and essential micronutrients. Optional functional ingredients such as chia seeds, flaxseed meal, dried fruits, and spices may be incorporated to enhance nutritional and sensory properties. The snack bar is prepared by mixing dry ingredients with a natural binder to form a cohesive mass, followed by shaping and setting under controlled conditions. The product offers sustained energy release, improved digestibility, and suitability for health-conscious, vegan, and allergen-sensitive consumers. The invention provides a scalable and preservative-free alternative to conventional snack bars while maintaining extended shelf stability and consumer-friendly characteristics.
