Abstract: ABSTRACT PLANT-PROTEIN DENSIFIED SNACK COMPOSITION WITH CONTROLLED POROSITY AND NON-EXPANDED MICROSTRUCTURE FORMED BY LOW-MOISTURE EXTRUSION The present invention relates to a protein-based snack composition (100) comprising a plant-protein matrix (102) including pea protein and rice protein and at least one binding agent (104), wherein the composition is present as discrete, free-flowing, bite-sized structures having a substantially non-expanded, densified protein matrix with a bulk density of 0.4–1.2 g/cm³ and porosity below 40%. The present invention further provides a method (200) comprising providing (202) a mixture of the plant-protein matrix (102) and binding agent (104), subjecting (204) the mixture to extrusion under 10–25% moisture and 100–180°C to suppress expansion and form the densified matrix, and forming (206) the material into said structures. The formed structures optionally undergo roasting or baking to achieve a moisture content of 2–8% by weight and desired mechanical properties including compression hardness and fracture force.
