Abstract: This work presents the design of a Portable Real-Time fruit and vegetable Degradation Assessment device for detecting spoilage in fruits/vegetables and fish. The device integrates a sensor probe with paired electrodes, embedded electronics, and a user interface within a compact handheld enclosure. By measuring changes in electrical impedance characteristics of food samples and applying temperature-compensated calibration models, the device enables rapid, non-destructive freshness assessment. Its portable and ergonomic configuration makes it suitable for on-site use in markets, storage facilities, and food quality inspection environments, reducing reliance on laboratory-based spoilage analysis.
