Abstract: POTATO STARCH INCORPORATED GREEK YOGURT AND PROCESS THEREOF The invention relates to a potato starch incorporated Greek yogurt and process thereof. The Greek yogurt comprises milk, Greek yogurt starter culture, and potato starch, wherein the potato starch is gelatinized and incorporated into milk along with the Greek yogurt starter culture. The process includes selecting milk at step 110, heating the milk to about 90°C at step 120, cooling the milk to about 40°C at step 130, heating potato starch for gelatinization at step 140, using Greek yogurt starter culture at step 150, combining the starter culture and gelatinized potato starch into milk at step 160, fermenting the milk mixture for about 8 hours at step 170, filtering the fermented mixture under refrigerated conditions using muslin cloth for about 2 hours at step 180, and storing the resulting food product under refrigerated conditions at step 190.
