Abstract: ABSTRACT PROCESS FOR THE EXTRACTION OF BETACYANIN FROM DRAGON FRUIT PEEL (SELENICEREUS SPP.) The present invention relates to an eco-friendly method for extracting betacyanin pigments from the peel of dragon fruit using a water- based Soxhlet extraction process. This invention provides a sustainable solution for the valorisation of agro-industrial fruit waste by utilizing dragon fruit peel, which is typically discarded, as a source of natural, antioxidant-rich pigments. The method involves drying the peel at 40°C and powdering the peel, followed by continuous extraction in a Soxhlet apparatus at 60°C using water as the extraction solvent. The aqueous extract is then concentrated by freeze drying to obtain a stable, high-yield betacyanin pigment. Unlike conventional methods that rely on organic solvents such as methanol or ethanol, this process uses water as a non-toxic, and food-safe solvent. The invention offers a reproducible and scalable technique that integrates principles of green chemistry and waste management. By combining a novel application of Soxhlet extraction with a water-based system and waste valorisation, the invention provides a cost-effective, sustainable alternative for producing natural colorants while contributing to environmental conservation.
