Abstract: The present disclosure proposes a process and beverage composition for preparing a clarified carbonated millet-based beverage from a clarified millet extract obtained by controlled aqueous extraction, filtration, and sedimentation, where the clarified millet extract is formulated with a sweetener and an acidulant, thermally treated, chilled, and carbonated under controlled carbon dioxide pressure conditions for ready-to-drink beverage applications. The composition (200) forms a non-fermented beverage matrix based on the clarified millet extract (202), an aqueous medium (204), sweetener (206), citric acid (208), a flavouring agent (210) and dissolved carbon dioxide (212). The process prepares a non-fermented millet-based carbonated beverage without reliance on germination, saccharification, probiotic fermentation, carbonation powder reconstitution, fruit-puree beverage systems, spice-based traditional beverage formulation, stabilizer-dependent suspension systems, or chemical clarifying agents.
