Abstract: The present invention provides a highly controlled, scalable, multi-stage enzymatic bioprocess for producing highly water soluble, low-bitterness plant protein hydrolysates. The method comprises dispersing a protein source in water, followed by a primary protease hydrolysis and a secondary targeted debittering hydrolysis using an exopeptidase complex. Following thermal inactivation of the enzymes, the hydrolysate undergoes a precise isoelectric precipitation to reduce the solubility of unhydrolysed or partially hydrolysed protein. The acidified liquid phase is subsequently purified via a sequential membrane filtration cascade, comprising microfiltration, to clarify the solution by removing insoluble impurities followed by ultrafiltration, accompanied by diafiltration to remove low-molecular-weight impurities. The resulting highly purified ultrafiltration retentate is spray-dried to yield a free-flowing, sensory-neutral Clear Hydrolysed Protein (CHP) powder. This optimized protein hydrolysate exhibits near-absolute solubility and maintains complete optical clarity and structural stability, rendering it ideally suited for use in high- protein, clear, acidic carbonated beverages and advanced nutritional formulations.
