MUMBAI, India, Aug. 17 -- Intellectual Property India has published a patent application (202641004958 A) filed by Indian Institute Of Technology Tirupati; and Coconut Development Board on January 19, 2026, for Process For Tender/Mature Coconut Water Powder With Reduced Hygroscopicity And Retention Of Nutrients And Flavour.

Inventors include Dr. Narendra Singh; Prof. Ksms Raghavarao; Pardeep Kumar; Mohammad Irfan; and N. Sai Prasanna.

The application for the patent was published on August 14, 2026, under issue no. 33/2026.

Abstract: The present invention relates to a spray-dried coconut water powder derived from tender and/or mature coconut water, exhibiting reduced hygroscopicity while retaining its nutritional composition and natural sensory qualities. The invention employs a formulation comprising coconut water in combination with maltodextrin and a low amount of sodium caseinate, which enables the production of a free-flowing and reconstitutable powder without the addition of preservatives. The inclusion of sodium caseinate improves powder flowability and rehydration characteristics and minimizes moisture absorption during storage. The coconut water powder obtained exhibits natural coconut taste and flavour, enhanced storage stability, and suitability for packaging in moisture-barrier materials, making it appropriate for extended shelf life and commercial applications.
