Abstract: Derivatives of sabinene, and more particularly to sabinene carboxaldehyde and its derivatives described herein, as well as their synthesis and use in organoleptic applications is provided. The sabinene derivatives include a compound having a general Formula (1): wherein: • R 1 is selected from the group consisting of acetals, monothioacetals, (CH=CR 2) X(CHR) mOR 3, (CH=CR 2) X(CHR) nCHO, (CH = CR 2) X(CHR) pCN; and (CH = CR 2) X(CHR) qCO 2R 4; each R is independently selected from the group consisting of H or methyl;R is selected from the group consisting of H, methyl, and ethyl; • R 3 is selected from the group consisting of H, C1- C3 aliphatics, and C(O)R, where R 2 is H or ethyl, propyl, isopropyl, butyl, isobutyl, pentyl, isopentyl, neopentyl, cyclopentyl, hexyl, isohexyl, neohexyl, or cyclohexyl; • R 4 is selected from the group consisting of C1-C3 alkyls; x is an integer equal to 0 or 1; and m, n, p, and q are integers independently selected from 0 to 7, with a proviso that when R and R 3 are each H, then x and m are not both equal to 0.
