Abstract: Post-harvest food waste from inaccurate freshness assessment causes significant economic losses and food security impacts throughout fruit supply chains. The Smart Fruit Identification and Freshness Monitoring System integrates a MobileNetV3 computer vision model for fruit species and ripeness classification with YOLOv8 surface defect detection, a headspace e-nose gas array with SVM spoilage pattern recognition, and an AS7265x NIR reflectance spectrometer with PLSR internal quality prediction. A weighted multi-parameter Freshness Index and Random Forest shelf life regression model provide comprehensive non-destructive quality assessment. A cloud traceability platform logs digital quality records with QR-coded produce labeling and provides supply chain analytics dashboards for batch quality management. The system enables accurate, rapid fruit freshness assessment from packhouse to retail for food waste reduction and supply chain quality optimization.
